Created by the American Pie Council®, National Pie Day is dedicated to the celebration of pie. In honor of the day, I'm sharing the recipe for my favorite pie, courtesy of Taste of Home.

Pecan Fudge Pie

Ingredients

1-1/4 cups light corn syrup
1/2 cup sugar
1/3 cup baking cocoa
1/3 cup all-purpose flour
1/4 teaspoon salt
3 eggs
3 tablespoons butter, softened
1-1/2 teaspoons vanilla extract
1 cup chopped pecans
1 unbaked pastry shell (9 inches)
Whipped cream, optional

Directions

In a large bowl, beat the first eight ingredients until smooth. Stir in nuts; pour into pie shell. Bake at 350° for 55-60 minutes or until set. Cool completely. Garnish with whipped cream if desired.

Yield: 6-8 servings.

Foster Failure

After fostering "Lefty" for three weeks, I was contacted by the shelter manager who told me he needed Lefty back so that he could be prepared for transport to a rescue in Minnesota. I knew it would be tough but I was prepared to let him go. I even fixed him a going away bag with his favorite stuffed toy and dog treats, along with a knotted toy I made out of an old t-shirt.

The more I thought about letting him go the more he tugged at my heart. I thought about how well he gets along with Sophie and Dakota and how happy he seems here with us. Later that night I emailed the shelter manager and asked if it was too late for me to adopt Lefty. Thankfully it wasn't.

This shelter doggie got a new name and a new home for Christmas! His name is now Rocco and he now shares a home with his doggie siblings - Sophie and Dakota, and six cat siblings - Maeka, Isabelle, Jasmine, Coco, Moka, Fonzi.

Ginger Crinkles

1 ¼ cups sugar
1 cup butter, softened
1 egg
3 tablespoons molasses
1 teaspoon vanilla
3 cups all-purpose flour
1 ½ teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
¼ teaspoon salt
¼ teaspoon ground cloves
sugar

Heat oven to 375º F. Combine sugar and butter in large bowl. Beat at medium speed until creamy. Add egg, molasses and vanilla. Continue beating, scraping bowl often, until well mixed. Reduce speed to low; add all remaining ingredients except additional sugar. Continue beating until well mixed.

Shape dough into 1-inch balls; roll balls in sugar. Place 2 inches apart onto ungreased cookie sheets. Bake for 10 to 12 minutes or until edges are lightly browned. Cool 1 minute on cookie sheets; remove to cooling rack.

Makes 6 dozen cookies.

Fostering Lefty

This beautiful boy was brought in to the Okefenokee Humane Society with a broken leg after being hit by a car. He had surgery Wednesday, November 23, to have his left front leg amputated. I picked him up at the shelter the following Friday and will be fostering him until a forever home is found for him. He's a really, really sweet boy and gets along very well with Sophie and Dakota.

Fostering an animal is one of the most rewarding ways to help a homeless pet. Because of overcrowding, many shelters are continually in need of room for incoming animals. Without foster programs, some dogs and cats might have to be euthanized. Foster parents provide a temporary home and care for animals that may be too young for adoption, are recovering from injury or illness, or may need some behavioral training prior to being put up for adoption. Dogs and cats who are fostered in positive, nurturing environments by people with basic training and behavior knowledge are more likely to be adopted, less likely to be returned to the shelter and more able to adapt to life in their new homes.

National Animal Shelter Appreciation Week

This week, November 6-12, is National Animal Shelter Appreciation Week. This is a great time to express our gratitude to the countless shelter volunteers who work tirelessly in their quest to save the lives of abandoned pets. It is often a tough and often thankless job but the shelter volunteers' dedication to and compassion for the animals is unwavering. Most of the animals that come into shelters are homeless, unwanted or sorrowfully relinquished because their owners can no longer care for them due to major life changes.

Approximately 3,500 animal shelters across the United States serve an estimated 6-8 million homeless animals who need refuge each year. If you are considering a new family pet, please consider adopting from a shelter. If you are unable to adopt a homeless dog or cat, there are many other ways you can help. Donations are always welcome, and while money is always needed, shelters also need other items like food, treats, blankets, towels, toys and cleaning supplies. Please help spread the word about the importance of responsible pet ownership, including spaying and neutering.

With Daylight Saving Time ending this weekend you may want to think about safeguarding your home from potential hazards as the colder months approach. While you’re setting your clocks back, don’t forget about your programmable thermostats, security systems, watches, car clocks, and all those other out of the way time keepers. This would also a great time to do a safety check on your home. Use the handy list below to prepare your home for the cold winter months ahead.

Change the batteries in your smoke detectors. Replace the actual unit once every 10 years. According to the National Fire Protection Agency, one-quarter (24 percent) of deaths were caused by fires in properties in which smoke alarms were present but failed to operate.

Have a certified professional inspect your chimney before use. Even if you haven’t used your fireplace, debris can build up and cause blockages. If you do use your chimney often, creosote, which is highly combustible, can layer in chimney walls and lead to chimney fires.

Clear your dryer vent and exhaust duct. The Consumer Product Safety Commission estimates that 15,000 dryer fires occur annually and cause more than $84.4 million in property damage.

Have your furnace cleaned and inspected, and change the filter. This is especially important for older furnaces, which can develop cracks and leak carbon monoxide.

Install carbon monoxide detectors in hallways near sleeping areas and change batteries yearly.

Operation Christmas Child

The mission of Operation Christmas Child is to demonstrate God's love in a tangible way to needy children around the world, and together with the local church worldwide, to share the Good News of Jesus Christ.

The gift-filled shoe boxes will be delivered by Samaritan's Purse to children around the world living in the midst of poverty, disease, war and natural disaster. Samaritan's Purse has distributed over 77 million boxes to boys and girls in over 130 countries since 1993. This year, Operation Christmas Child is striving towards a goal of more than 750,000 boxes. Together, we can use the power of a simple gift to touch the hearts of children and change lives.

Pens, pencils and sharpeners, crayons or markers, stamps and ink pad sets, writing pads or paper, solar calculators, coloring and picture books, etc.

Hygiene Items

Toothbrush, toothpaste, mild bar soap (in a plastic bag), comb, washcloth, etc.

A personal note

In a separate envelope, you may enclose a note to the child and a photo of yourself or your family (if you include your name and address, the child may write back)

Do not include:

Used or damaged items; war related items such as toy guns, knives or military figures; chocolate or food; out‐of-date candy; liquids or lotions; medications or vitamins; breakable items such as snowglobes or glass containers; aerosol cans

Use an empty shoe box (standard size, please) or a small plastic container. You can wrap the box (lid separately), but wrapping is not required. Most importantly, pray for the child who will receive your gift.
Determine whether your gift will be for a boy or a girl, and the child’s age category: 2-4, 5-9, or 10-14. Print out the appropriate boy/girl label by downloading the artwork to the right. Mark the correct age category on the label, and tape the label to the top of your box.

Fill the box with a variety of gifts that will bring delight to a child. Use the gift ideas provided on the bottom of this page.

Please donate $7 or more for each shoe box you prepare to help cover shipping and other project costs. You can give online by using our “Follow Your Box Donation” option, or you can write a check to Samaritan’s Purse (note “OCC” on memo line) and place it in an envelope on top of the gift items inside your box. If you or your family are preparing more than one shoe box, please make one combined donation.

Place a rubber band around each closed shoe box and drop off at the Collection Center nearest you during our collection week, November 14-21.

2011 National BBQ Festival

The 2011 National BBQ Festival will be held at the Okefenokee Exchange Club Fairgrounds in Waycross, Georgia on November 4th-5th. Representatives from the National Barbecue News, National BBQ Festival LLC, and the Exchange Club of Waycross make every possible effort to make this the Greatest BBQ Show on Earth.

$5 entry fee - receive People’s Choice Ticket (while supplies last) or a racing pig with a chance to win a $50 gas card every thirty minutes. All proceeds benefit the Waycross Exchange Club and will provide services for the youth of Ware County.

Kids under 12 get in free.
